Carrot Muffins

Yep, I'm posting pictures of my breakfast again....

So I made these for breakfast this morning, and they were very very good.  
Good enough to share.
I made a couple of minor changes:
I didn't soak the raisins.  I didn't have time.  It didn't make a big difference.
I reduced the salt.
I didn't make my own icing.  I used a canned cream cheese icing.

Half a recipe makes 12 standard muffins.

  3. So, had I seen this recipe just randomly, there is no way I would have made it. But, since you gave it rave reviews, I decided to try the carrot muffins tonight. You were right! They are yummy, even without the icing I am too tired to make.
